  • 2 tomatoes
  • 1 clove garlic
  • 2 Habanero chiles
  • 1/4 onions
  • 1 allspice berry
  • coarse salt
  • cilantro, finely chopped

  • Roast the tomatoes, garlic clove, habanero chili, and onion on a griddle. Remove and set aside.
  • Add the onion and garlic to a molcajete and crush with the pestle. Then add the tomatoes, habanero chiles, allspice, and salt.
  • Incorporate the cilantro and serve chiltomate with pork beans and tortillas.
