2 cups hibiscus flower
1/4 cups onion, finely chopped
1 clove garlic, finely chopped
3 tablespoons balsamic vinegar
1/4 cups chipotle chile in adobo sauce, 60 grams
2 tomatoes, roasted
2 tablespoons vegetable oil
3 tablespoons piloncillo, grated
salt and pepper

In a saucepan, boil the water and add the hibiscus flowers, let it cook for 3 minutes. Let it cool and set aside.
In a blender, add the hibiscus flowers, onion, garlic, balsamic vinegar, adobo chipotle, add a bit of the cooking water from the hibiscus, and blend.
In a saucepan over medium heat, add the oil and pour in the sauce, add the piloncillo, season with salt and pepper, and let it cook for 5 minutes.
