Chipotle and Hibiscus Sauce

This spectacular chipotle sauce with hibiscus will give you a pleasant spicy flavor while balancing with the subtle taste of piloncillo; it complements and enhances your dishes with this recipe.

  • 2 cups water
  • 2 cups hibiscus flower
  • 1/4 cups onion, finely chopped
  • 1 clove garlic, finely chopped
  • 3 tablespoons balsamic vinegar
  • 1/4 cups chipotle chile in adobo sauce, 60 grams
  • 2 tomatoes, roasted
  • 2 tablespoons vegetable oil
  • 3 tablespoons piloncillo, grated
  • salt and pepper

  • In a saucepan, boil the water and add the hibiscus flowers, let it cook for 3 minutes. Let it cool and set aside.
  • In a blender, add the hibiscus flowers, onion, garlic, balsamic vinegar, adobo chipotle, add a bit of the cooking water from the hibiscus, and blend.
  • In a saucepan over medium heat, add the oil and pour in the sauce, add the piloncillo, season with salt and pepper, and let it cook for 5 minutes.
