Chipotle and Tomato Sauce

The chipotle and tomato sauce can be used to accompany tacos, meats, chicken, enchiladas, etc. It is made from roasted tomatoes, onion, chipotle pepper, and spices.

  • 6 tomatoes, ball type
  • 1 onion, finely chopped
  • 1/4 cups fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 4 tablespoons chipotle chile, chopped (canned)
  • salt, to taste

  • Place a skillet over medium heat and roast the tomatoes until their skin is slightly charred. (approx. 10 minutes)
  • Remove from heat, peel off the skin, and cut into cubes.
  • In a large deep bowl, mix the tomato, onion, cilantro, lime juice, oil, garlic, chipotle, and salt.
  • If desired, you can use the sauce as is, or if you want a smooth sauce, you can blend and strain it.
