The chipotle sauce and tomato can be used to accompany tacos, meats, chickens, enchiladas, etc. It is made with baked tomatoes, onions, chipotle peppers and spices.

Ingredients

4 portions
  • 6 tomatoes, ball type
  • 1 onion, finely chopped
  • 1/4 cups fresh coriander, chopped
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 4 tablespoons chipotle chili, chopped (canned)
  • salt, to taste

Preparation

Put a comal over medium heat and sauté the tomatoes until their skin is slightly burned. (Approximately 10 minutes)
Remove from the oven, peel your skin and cut into cubes.
In a large bowl, mix the tomato, onion, cilantro, lemon juice, oil, garlic, chipotle and salt.
If you want you can use the sauce as well or if you want a sauce without lumps you can liquefy it and strain it.

Primera vez que preparo salsa chipotle. Hice poquita solo para 2 personas. Traté de poner una tercera parte de todo, se me pasó la mano con el limón. De ahí en más esta buena. La práctica hace al maestro.
