Detox Berry Vinaigrette

Berries are antioxidants that help prevent cardiovascular diseases; they are useful for combating cholesterol and improving circulation. Include them in your meals with this berry vinaigrette recipe, perfect for your salads or proteins.

  • 1/4 cups blueberries
  • 1/2 cups raspberries
  • 1/2 cups strawberries, without stems, quartered
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon ginger, grated
  • salt

  • 1/2 cups vegetable oil
  • 1 Eva® mini Romaine lettuce
  • 1/2 cups cherry tomato, halved
  • 120 grams chicken breast, roasted, sliced
  • 1/4 cups panela cheese, cubed
  • 2 tablespoons walnuts, finely chopped

  • For the vinaigrette: Blend the blueberry with the raspberry and strawberry until you get a smooth and thick mixture. If necessary, add a tablespoon of water to make it easier to blend the fruit.
  • Pour the blended mixture into a bowl and add the balsamic vinegar, Dijon mustard, honey, ginger, and season with salt and pepper; mix with a whisk and, while continuously stirring, pour in the vegetable oil until completely integrated and emulsified. Pour into a previously sterilized glass jar.
  • Serve the vinaigrette on a salad with Mini Romaine Eva® lettuce, cherry tomatoes, roasted chicken breast, cubed panela cheese, and chopped walnuts.
