For the vinaigrette: Blend the blueberry with the raspberry and strawberry until you get a smooth and thick mixture. If necessary, add a tablespoon of water to make it easier to blend the fruit.
Pour the blended mixture into a bowl and add the balsamic vinegar, Dijon mustard, honey, ginger, and season with salt and pepper; mix with a whisk and, while continuously stirring, pour in the vegetable oil until completely integrated and emulsified. Pour into a previously sterilized glass jar.
