Prepare the base of your guacamole. In a molcajete, grind the onion along with the garlic, grain salt, and lime juice until you obtain a puree. Add the avocado pulp and mix. Finally, add the chopped cilantro and stir with a spoon.
Add mint and mix with the guacamole base. Add the fried plantain and chopped pineapple. Serve with whole grain crackers.
