Ingredients: 1/4 onions; 1 clove garlic, without skin; 1 tablespoon coarse salt; 1/4 cups lime juice, seedless; 6 avocados, just the pulp, ripe; 1/2 bunches cilantro, chopped; peppermint, finely chopped; 1 cup plantain, fried; 1/2 cups pineapple, in cubes; wholegrain crackers, for serving

Prepare the base of your guacamole. In a molcajete, grind the onion along with the garlic, grain salt, and lime juice until you obtain a puree. Add the avocado pulp and mix. Finally, add the chopped cilantro and stir with a spoon. Add mint and mix with the guacamole base. Add the fried plantain and chopped pineapple. Serve with whole grain crackers.
