Cucumber and Yogurt Dressing

This dressing is perfect for accompanying any salad; my recommendation is to use it in the Roasted Chicken and Wheat Salad. It's a light and delicious dressing.

  • 1 cup cucumber, peeled, seedless, and chopped
  • 3 tablespoons plain yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • 1/4 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1/8 dill, dry
