1 egg yolk
1 teaspoon mustard, (preferably Dijon)
1/2 cups olive oil
1 teaspoon lime juice
1 pinch salt

Place the egg yolk in a bowl along with the mustard.
Start whisking with a whisk or with the help of an electric mixer on medium speed.
Gradually add the olive oil in a thin stream while continuing to whisk until the mixture becomes thick.
Season with lemon juice and salt.
