Ingredients

4 portions
  • 1 egg yolk
  • 1 teaspoon mustard, (preferably Dijon)
  • 1/2 cups olive oil
  • 1 teaspoon lemon juice
  • 1 pinch salt

Preparation

Place the yolk in a bowl with the mustard.
Start beating with a balloon whisk or with the help of an electric mixer at medium speed.
Add the olive oil in the form of a thread while stirring until the preparation looks thick.
Season with lemon juice and salt.
