1 clove garlic, chopped
1/4 cups red onion, chopped
2 cups tamarind pulp
1 chipotle chile in adobo sauce
1 tablespoon sugar
1 pinch salt
1 pinch pepper
Preparation

Heat the olive oil in a skillet, cook the garlic, onion, and tamarind pulp, and let it come to a boil.
Lower the heat, add the chipotle chili in adobo and the sugar. Cook for 5 minutes and let it cool slightly.
Blend the sauce until you get a smooth and homogeneous mixture. Return to the pot and cook over low heat for 10 minutes. Season with salt and pepper.
Serve hot or cold.
