Tamarind Salsa

  • 2 tablespoons olive oil
  • 1 clove garlic, chopped
  • 1/4 cups red onion, minced
  • 2 cups tamarind pulp
  • 1 chipotle chile in adobo sauce
  • 1 tablespoon sugar
  • 1 pinch salt
  • 1 pinch pepper

  • In a skillet, heat olive oil. Add garlic, onion, and tamarind pulp and bring to a boil.
  • Lower heat. Add chipotle chile in adobo sauce and sugar. Cook for 5 minutes and let cool slightly.
  • Transfer salsa to a blender and blend until smooth. Pour salsa back into the skillet and cook over low heat for 10 minutes. Season with salt and pepper.
  • Serve tamarind salsa either hot or cold.
