2 tablespoons onion, chopped
1/4 tablespoons ginger powder
2 cups mango, diced
3/4 cups sugar
1/2 cups apple cider vinegar
60 grams raisins
1 clove garlic
1 tablespoon piquín chile
1/2 cups water

In a saucepan, melt the butter, add the onion, garlic, and cook until they are translucent.
Add the diced mango, vinegar, sugar, and cook until the sugar is completely dissolved.
Add the raisins, season with chili powder, ginger, and finally add the water.
Increase the heat, stir constantly, and adjust seasoning with water and salt.
Leave on heat until the mango breaks down and thickens a bit. Serve in a sauceboat.
