Pickled Chiles

  • 1 kilo Jalapeño chile
  • 1 cup white vinegar
  • 2 onions
  • 300 grams carrot
  • 1 tablespoon marjoram
  • 5 leaves bay
  • pepper
  • 1 cup water
  • olive oil

  • First, cut the chiles into quarters lengthwise, the onion into julienne strips, and the carrot into slices.
  • In a clay pot, add the oil and heat it up.
  • After about 20 minutes, add the vinegar and water; once it boils, add the spices and season with salt and pepper.
  • Let it boil a little longer and taste for seasoning.
