1 kilo Jalapeño chile
1 cup white vinegar
2 onions
300 grams carrot
1 tablespoon marjoram
5 leaves bay
pepper
1 cup water
olive oil

First, cut the chiles into quarters lengthwise, the onion into julienne strips, and the carrot into slices.
In a clay pot, add the oil and heat it up.
After about 20 minutes, add the vinegar and water; once it boils, add the spices and season with salt and pepper.
Let it boil a little longer and taste for seasoning.
