Red Onion Sauce for Tacos

The purple onion sauce traditionally accompanies the cochinita pibil tacos and can be used to accompany many other dishes.

  • 1/2 cups white vinegar
  • 1 red onion, julienned
  • 1 tablespoon vegetable oil
  • 1/2 Jalapeño chiles, optional
  • 1 pinch salt

  • In a saucepan over medium heat, heat the vegetable oil and brown the red onion for 2-3 minutes.
  • Add the vinegar and cook over low heat until the vinegar has turned purple. Approximately 10-15 minutes.
  • If you want spicy, add the jalapeño and cook for 1 more minute.
  • Let cool and serve.
