Preparation
In a saucepan over medium heat, add the vegetable oil and brown the purple onion for 2-3 minutes.
Add the vinegar and cook over low heat until the vinegar has turned a purple color. Approximately 10-15 minutes.
In the case of wanting spicy add the jalapeño and cook for 1 minute more.
Let cool and serve.
