The purple onion sauce traditionally accompanies the cochinita pibil tacos and can be used to accompany many other dishes.

Ingredients

4 servings
  • 1/2 Cup of White vinegar
  • 1 red onion cut in julienne
  • 1 tablespoon of vegetable oil
  • 1/2 jalapeño optional
  • 1 pinch of Salt

Preparation

In a saucepan over medium heat, add the vegetable oil and brown the purple onion for 2-3 minutes.
Add the vinegar and cook over low heat until the vinegar has turned a purple color. Approximately 10-15 minutes.
In the case of wanting spicy add the jalapeño and cook for 1 minute more.
Let cool and serve.

TIPS

This sauce can be stored for several days in refrigeration.

Me encantó la receta, sencilla y deliciosa. Utilicé cebollitas ocañeras (Colombia); no me aguanté, y le adicioné unos cuantos clavos de olor que le dieron un toque “deli”
