Red Sauce with Adobo Chipotle

  • 1 clove garlic, without skin
  • 1/4 onions
  • 4 tomatoes
  • 1 teaspoon coarse salt
  • 4 black peppercorns
  • 1 tablespoon water
  • 1 can chipotle chile in adobo sauce, 210 g
  • 1/4 bunches cilantro, finely chopped

  • Roast the garlic along with the onion and tomato on a hot skillet over medium heat until the skin begins to darken, stirring constantly for even cooking.
  • Grind the coarse salt along with the whole pepper in a molcajete until powdered. Then add the garlic and onion with a little water and continue grinding until you obtain a puree. Add the tomatoes one by one and grind to integrate. Once you have a crushed sauce, add the can of adobo chipotle and the chopped cilantro. Adjust the seasoning.
  • Serve the red sauce with adobo chipotle with tortilla chips.
