Roasted Salsa with Beer

  • 1/4 onions
  • 2 cloves garlic, without skin
  • 4 tomatoes
  • 1 serrano chile
  • 1 árbol chile
  • 2 allspice berries
  • 1 teaspoon cumin
  • 1 tablespoon coarse salt
  • 1/4 cups cilantro leaves
  • 1/2 cups Modelo® Ámbar lager beer
  • Modelo® Ámbar lager beer, to pair
  • tortilla chips, to accompany

  • On a comal over medium heat, roast the onion, garlic, tomato, serrano chili, árbol chili, black pepper, and cumin for 10 minutes.
  • In a molcajete, grind the coarse salt, black pepper, and cumin until they become powder; then add the árbol chili, garlic, onion, tomato along with the serrano chili, cilantro, and Modelo® Amber Beer, continue grinding until all the ingredients break down and reach a salsa consistency.
  • Serve and pair with a Modelo® Amber Beer and corn tortilla chips.
