Salsa Borracha

The beer-based salsa borracha is a very tasty sauce to accompany fish or barbacoa tacos.

  • 250 milliliters lager beer
  • 2 tomatoes, chopped
  • 1 onion, finely chopped
  • 5 Jalapeño chiles
  • 2 tablespoons vegetable oil
  • salt, to taste

  • Heat the oil in a pot over medium heat.
  • Sauté the onion and chiles in the oil for 2 minutes and add the tomatoes. Continue cooking for 5 minutes or until the tomatoes release their juice.
  • Add the beer and salt and cook for 20 minutes, allowing the beer to cook the tomatoes.
  • Blend the sauce and serve.
