The beer-based salsa borracha is a very tasty sauce to accompany fish or barbacoa tacos.

250 milliliters lager beer
2 tomatoes, chopped
1 onion, finely chopped
5 Jalapeño chiles
2 tablespoons vegetable oil
salt, to taste

Heat the oil in a pot over medium heat.
Sauté the onion and chiles in the oil for 2 minutes and add the tomatoes. Continue cooking for 5 minutes or until the tomatoes release their juice.
Add the beer and salt and cook for 20 minutes, allowing the beer to cook the tomatoes.
Blend the sauce and serve.
