Spicy Drunken Salsa

A delicious Mexican salsa recipe with pasilla chili and tomatillo.

  • 6 pasilla chiles
  • 5 tomatillos
  • 2 cloves garlic
  • 1/2 white onions, chopped
  • 1 tablespoon salt
  • 125 milliliters beer
  • 1 orange
  • 3 tablespoons vegetable oil
  • 200 grams añejo cheese

  • In a skillet, heat the oil and fry the chiles for 4-5 minutes until toasted. Remove from the oil and drain on a paper towel. Once cool, crumble them with your hands.
  • In the skillet with the oil, fry the tomatoes and garlic for 5 minutes and remove. Add the onion and fry as well.
  • Blend all the ingredients except the beer and orange, adding a little water if needed.
  • Pour the mixture into the hot skillet and cook for 5 minutes.
  • Pour the mixture into a gravy boat and add the juice of half an orange and the beer.
