Authentic Macha Sauce

Macha sauce is originally from the state of Veracruz; it is a spicy sauce made from pure dried chiles, fried in oil, with garlic and some ingredients like sesame and peanuts or just chiles. This sauce is ideal for any kind of snacks and dishes.

  • 1/2 cups olive oil
  • 2 ancho chiles, cleaned, seedless, and deveined
  • 1 pasilla chile, cleaned, seedless, and deveined
  • 1/4 cups morita chile, cleaned, seedless, and deveined
  • 1/4 cups árbol chile, cleaned, seedless, and deveined
  • 2 tablespoons sesame seeds
  • 4 cloves garlic, with skin
  • 1 pinch coarse salt, for grinding

  • For the sauce, heat a skillet over medium heat with the oil, fry the chiles with the sesame and garlic, remove the preparation from the skillet and let it cool. Remove the skin from the garlic you fried earlier.
  • Place the previous preparation in the molcajete with salt and grind, gradually adding the oil, continue until you obtain a sauce. Serve.
