Macha sauce is native to the state of Veracruz, it is a hot sauce prepared with pure dry chiles, fried in oil, with garlic and some ingredients such as sesame and peanuts. This sauce is ideal for any type of appetizers and dishes.

Ingredients

10 portions
  • 1/2 cups olive oil
  • 2 ancho chili peppers, clean without seeds and deveined
  • 1 pasilla chili pepper, clean without seeds and deveined
  • 1/4 cups morita chile pepper, clean without seeds and deveined
  • 1/4 cups Chile de árbol pepper, clean without seeds and deveined
  • 2 tablespoons sesame seed
  • 4 cloves garlic, with the shell
  • 1 pinch sea salt, to crush

Preparation

For the sauce, heat a skillet over medium heat with the oil, fry the chiles with the sesame seeds and garlic, remove the preparation from the pan and chill. Remove the peel from the garlic that you previously fried.
Place the previous preparation in the molcajete with the salt and the dressing adding the oil little by little, continue until you get a sauce. Serve.

PRESENTATION

Serve your sauce in a bowl.

TIPS

Take care so that the chiles, when frying them, if the oil is very hot they can burn, which will make the sauce bitter.
