Caribbean/ Yellow Chili Sauce, Botanera Style and Black Sauces

Today I leave you 2 recipes in one to prepare a delicious yellow chili sauce with lime or in black sauces. I hope you like them and can enjoy them with whatever you like the most.

  • 12 güero chiles, charred and deveined
  • 1/2 cups lime juice 1/2 cups lime juice
  • 1/2 teaspoons chicken bullion
  • 4 teaspoons soy sauce, for black sauces 4 teaspoons soy sauce, for black sauces
  • 4 teaspoons seasoning, liquid
  • 1/2 cups lime juice 1/2 cups lime juice
  • 1 cucumber, seedless, finely chopped 1 cucumber, seedless, finely chopped

  • Char the chiles and place them in a plastic bag to sweat so it's easier to remove the skin. Clean and devein, cut to your liking, either finely or julienne. Set aside in a bowl.
  • With lime: in a bowl mix the lime juice with the broth and season to taste, pour over the chiles and let marinate for 1 hour in the refrigerator.
  • In black sauces: in a bowl mix the lime juice with the black sauces and season to taste, pour over the chiles and let marinate for 1 hour in the refrigerator.
