Classic Drunken Sauce

The drunken sauce is perfect for accompanying tacos, quesadillas, or as a snack, as it is typical of Mexican cuisine. Additionally, the touch of pulque or beer will give it that unparalleled flavor that characterizes it. It's finger-licking good!

  • 2 cups beer
  • 3/4 cups orange juice
  • 2 morita chiles, cleaned
  • 8 pasilla chiles, cleaned
  • 1/2 onions, cut into quarters and roasted
  • 2 cloves garlic, peeled and roasted
  • 1 teaspoon oregano
  • salt
  • pepper
  • Cotija cheese, grated, for garnish
  • tortilla chips, for accompaniment

  • Pour the beer and orange juice into a pot over medium heat, then add the chiles and heat for 10 minutes to soften them. Set aside.
  • Blend the onion, garlic, oregano, salt, pepper, and the previous mixture where you softened the chiles until all ingredients are well integrated.
  • Serve the drunken sauce in a bowl, garnish with Cotija cheese, and accompany with tortilla chips.
