Cochinita Sauce

Enjoy the famous cochinita pibil sauce, an irresistible pickled onion with a spicy touch from the habanero pepper.

  • 1 red onion
  • 2 Habanero chiles, Roasted
  • 1/4 cups lime juice
  • 1/4 cups orange juice
  • 1 tablespoon oregano
  • salt
  • pepper
  • cochinita pibil, to accompany

  • Slice the onion into half-moons with a knife. Place in a bowl and set aside.
  • Finely chop the habanero peppers and add to the bowl. Set aside.
  • Pour the lime juice, orange juice, and oregano into the same bowl. Season with salt and pepper and let sit for 30 minutes.
  • Serve the sauce and pair it with cochinita.
