Drunken Salsa with Beer

  • 10 pasilla chiles, cleaned and deveined
  • 1/4 white onions
  • 1 clove garlic, peeled and seedless
  • 5 tomatillos, cut into quarters
  • 100 milliliters beer, light or dark
  • 20 milliliters vegetable oil
  • 3 allspice berries
  • 2 pinches coarse salt
  • 80 grams Cotija cheese

  • Fry the chiles in oil and remove them. Roast the garlic, onion, and tomatillos. Blend everything with the beer, a pinch of salt, and pepper. Fry this mixture and season with another pinch of salt. Serve with crumbled or grated cotija cheese.
