Place the tomatillos in a skillet. After 5-10 minutes, add the garlic cloves, chiles, and the onion (cut in half). Let them cook until they are done.
Once everything is cooked, add the beer and cilantro, and cook over low heat until the beer has completely reduced. Season with salt and pepper.
Remove from heat and let cool slightly. In a molcajete, make the sauce. Remember to scrape well with the edges of the molcajete to get the flavor from the stone.
