  • 30 chipotle chiles, without stems
  • 1 tomato, for the adobo
  • 4 cloves garlic, for the adobo
  • 1/4 onions, for the adobo
  • 1 tablespoon oregano, for the adobo
  • 1 teaspoon cumin, whole, for the adobo
  • 1 teaspoon cloves, for the adobo
  • 1 teaspoon allspice berry, whole, for the adobo
  • 1/4 cups vinegar, for the adobo
  • 1 pinch salt
  • 1 tablespoon vegetable oil
  • 1 cup white onion, sliced

  • Heat the water and piloncillo in a pot over medium heat until dissolved. Then, add the chipotle chiles and cook for 30 minutes or until fully rehydrated. Remove the chiles and reserve 5 pieces and the soaking water for the adobo.
  • Heat a comal over high heat and roast the tomato, garlic, onion, oregano, cumin, cloves, and allspice until they release their aroma, but be careful not to burn them.
  • For the adobo: blend the chiles and the water you reserved earlier, then add the ingredients you roasted, white vinegar, and salt to taste.
  • Heat the oil in a pot over medium heat and fry the onion until it becomes transparent. Then, add the adobo, cook for 5 minutes, and add the whole chipotle chiles, cooking for 20 minutes.Store the homemade chipotle chiles in a glass jar and let cool. Serve the dish of your choice with your adobo chipotle chiles.
