  • 2 tablespoons vegetable oil
  • 1/2 onions, in quarters
  • 2 cloves garlic, without skin
  • 2 cups tomato, in quarters
  • 5 guajillo chiles, seedless and stemless
  • 3 árbol chiles, seedless and stemless
  • 1 cup chicken broth
  • salt
  • pepper
  • 2 tablespoons vegetable oil, for the sauce
  • tortilla chips, to present the sauce
  • chicken, cooked, shredded, to present the sauce
  • sour cream, for decoration
  • queso fresco

  • Heat the vegetable oil in a pot over medium heat. Once hot, add the onion and garlic, and cook for 5 minutes or until they turn slightly transparent. Incorporate the tomato and cook for 5 more minutes.
  • When the tomato is a bit soft, add the guajillo chili and the árbol chili. Cook for 2 more minutes or until they soften slightly.
  • Pour the chicken broth, cook for 10 minutes or until the chiles are soft. Remove from heat and let cool before blending.
  • Blend with the broth in which the previous ingredients were cooked. Season with salt and pepper and blend until smooth.
  • Pour the vegetable oil into a pot, heat over medium heat, and add the blended and strained sauce. Cook for 10 minutes and adjust the seasoning.
  • Serve the red sauce over tortilla chips and add cooked chicken, cream, and cheese. Enjoy!
