Mango Pico de Gallo

Prepare this refreshing mango pico de gallo, a salsa or side dish with the perfect balance of sweet and spicy. Best of all, this pico de gallo recipe is made with mango in syrup and is ideal for pairing with cheeses, chicken dishes, fish, or grilled vegetables.

  • 3 mangoes, in syrup
  • 1/2 red onions, large
  • 2 tomatoes
  • 2 serrano chiles
  • 1/4 cups cilantro, chopped
  • 1/4 cups spearmint, chopped
  • 2 tablespoons sesame oil, toasted
  • 1/4 cups lime juice
  • salt
  • pepper
  • tortilla chips, for serving

  • Grill the mango slices in a grill pan on both sides, then cut into small cubes and set aside.
  • Chop the red onion and tomato into small cubes and slice the serrano pepper. Place everything in a bowl along with the mango cubes.
  • Add the cilantro, mint, toasted sesame oil, lime juice, and enough salt and pepper. Mix and marinate in the refrigerator for at least 15 minutes.
  • Serve the mango pico de gallo with tortilla chips to taste.
