10 serrano chiles, or habaneros
1/2 onions, in quarters
2 garlic, whole, peeled
2 tablespoons olive oil
1 cup water
salt
20 grams fresh cilantro, finely chopped
1 onion, finely chopped

In a pan, heat the olive oil, add the chiles, onion, and garlic. Fry until the skin of the chiles starts to turn slightly brown.
Pour the previous mixture into the blender, add half to one cup of water, and blend until you reach the desired consistency.
Reserve the sauce in a container, add the chopped onion and cilantro. Add salt to taste.
