A sauce to accompany tacos, Swiss enchiladas, and to put on anything we want to spice up and enhance the flavor. It's finger-licking good.

7 manzano chiles, or perón
3 tablespoons vegetable oil
1/2 onions
1 clove garlic, large
1 pinch salt
1/2 cups water

Cut the chiles (you can remove the seeds if you want), cut the onion into wedges.
Sauté the chiles, onion, and garlic in the oil until they turn golden.
Place everything in the blender along with the oil from the pan, add a little water, season, and blend.
Enjoy!
