Perón Chili Oil Sauce

A sauce to accompany tacos, Swiss enchiladas, and to put on anything we want to spice up and enhance the flavor. It's finger-licking good.

  • 7 manzano chiles, or perón
  • 3 tablespoons vegetable oil 3 tablespoons vegetable oil

  • Cut the chiles (you can remove the seeds if you want), cut the onion into wedges.
  • Sauté the chiles, onion, and garlic in the oil until they turn golden.
  • Place everything in the blender along with the oil from the pan, add a little water, season, and blend.
  • Enjoy!
