Red Sauce

This recipe is from a neighboring restaurant where I work; they serve it as a complement to various dishes like fajitas or some fish. It's delicious with tortilla chips and essential for any barbecue.

  • 1 kilo Roma tomato
  • 4 guajillo chiles
  • 4 árbol chiles
  • 1/2 red onions
  • 1 bunch fresh cilantro
  • 2 tablespoons olive oil
  • garlic, to taste
  • chicken consommé
  • salt , to taste
  • pepper, to taste

  • Boil the tomatoes, chiles, and onion.
  • Blend the tomatoes, chiles, and onion without water.
  • Add the cilantro (uncooked) and continue blending.
  • Sauté the sauce, adding salt and pepper to taste.
