Red sauce

This recipe is from a restaurant near the place where I work, they serve it as a complement to several dishes such as fajitas, or some fish. It is delicious with chips and indispensable in all roasted meat.

  • 1 kilo Roma tomato
  • 4 guajillo chiles
  • 4 árbol chiles
  • 1/2 red onions
  • 1 bunch fresh cilantro
  • 2 tablespoons olive oil
  • garlic, to taste
  • chicken consommé
  • salt, to taste
  • pepper, to taste

  • Cook the tomatoes, chilies and onions.
  • Blend tomatoes, chilies and onions without water.
  • Add the cilantro (uncooked) and continue blending.
  • Sauté the sauce, add salt and pepper to taste.
