This recipe is from a restaurant near the place where I work, they serve it as a complement to several dishes such as fajitas, or some fish. It is delicious with chips and indispensable in all roasted meat.

Ingredients

10 portions
  • 1 kilo saladette tomatoes
  • 4 guajillo chilies
  • 4 chile de árbol peppers
  • 1/2 red onions
  • 1 bouquet fresh coriander
  • 2 tablespoons olive oil
  • garlic, to taste
  • consommé
  • salt, to taste
  • black pepper, to taste

Preparation

Cook the tomatoes, chilies and onions.
Blend tomatoes, chilies and onions without water.
Add the cilantro (uncooked) and continue blending.
Sauté the sauce, add salt and pepper to taste.

TIPS

Depending on how liquid you want the sauce, you can add the broth. Cilantro can make the sauce sweeter. If you like garlic you can add it from the first step.
