Spinach Pesto

Delicious spinach pesto that can be served in penne pasta or roasted chicken strips.

  • 1/4 cups toasted pine nut
  • 2 teaspoons lime zest
  • 2 tablespoons lemon juice
  • 1/3 cups Parmesan cheese, fresh grated
  • 1/2 teaspoons pepper
  • 1/3 cups extra virgin olive oil

  • Mix all the ingredients of this recipe in the food processor to form a sauce.
