Delicious spinach pesto that can be served in penne pasta or roasted chicken strips.

Ingredients

6 servings
  • 2 cups of baby spinach
  • 1/4 of Cup of toasted pine nuts
  • 2 teaspoons of lemon zest
  • 2 spoonfuls of yellow lemon juice
  • 1/3 of Cup of Parmesan cheese fresh grated
  • 1/2 teaspoonful of black pepper
  • 1/3 of Cup of extra virgin olive oil

    Preparation

    Wash the spinach and dry with a kitchen towel.
    Mix all the ingredients of this recipe in the food processor to form a sauce.
    Use on pasta or roasted chicken.

    TIPS

    You can store it in the refrigerator with a little olive oil on top and tightly covered for up to 1 month.
