Toasted Chiles with Caramelized Onion

  • 2 onions, median
  • 4 tablespoons olive oil
  • 1 tablespoon vinegar
  • 100 grams sugar
  • 1 pinch salt
  • 20 serrano chiles, from medium to small
  • English sauces

  • Put the chilies with a little oil to brown in a pan, it does not matter if they look a little black.
  • To caramelize the onion: Finely chop the onion in julienne, add the onion with oil and a little salt over low heat. It must be very soft and transparent.
  • Add the sugar and vinegar to the onion, raise the heat and let caramelize for about 15 minutes or so while still moving a long time.
  • Add the peppers and the onion preparation is ready for 2 minutes. Remove from the fire.
  • Pour the preparation into a bowl, add a drizzle of olive oil and a little English sauce.
