Ingredients

  • 2 onions, median
  • 4 tablespoons olive oil
  • 1 tablespoon vinegar
  • 100 grams sugar
  • 1 pinch salt
  • 20 serrano peppers, from medium to small
  • English sauces
  • extra virgin olive oils

Preparation

Put the chilies with a little oil to brown in a pan, it does not matter if they look a little black.
To caramelize the onion: Finely chop the onion in julienne, add the onion with oil and a little salt over low heat. It must be very soft and transparent.
Add the sugar and vinegar to the onion, raise the heat and let caramelize for about 15 minutes or so while still moving a long time.
Add the peppers and the onion preparation is ready for 2 minutes. Remove from the fire.
Pour the preparation into a bowl, add a drizzle of olive oil and a little English sauce.
