Peel, clean, and cut the apples into large squares and add lemon juice to reduce the risk of oxidation.
Put a large pot and add all the remaining ingredients and the apples. Bring the apples to a boil and reduce the heat to keep them simmering for 15 minutes. Remove the lid and continue cooking for 5 more minutes.
Remove the pot from the heat and take out the cinnamon stick. With a fork, make a very rustic puree with the apples and the juices.
Let cool to room temperature and refrigerate, covered until used.
