Preparation
Peel, clean and cut the apples into large squares and add the lemon juice to reduce the risk of oxygenation.
Put a large pot and add all the remaining ingredients and apples. Boil the apples and reduce the heat to keep them heating for 15 minutes. Remove the lid and continue cooking for 5 more minutes.
Remove the pot from the heat and remove the piece of cinnamon. With a fork make a very rustic puree with apples and juices.
Allow to cool to room temperature and refrigerate, covered until used.
