6 potatoes, hollowed out in the center, reserving the pulp
3/4 cups sour cream
3/4 cups bacon, fried and finely chopped
5 tablespoons chives, finely chopped
1 1/2 cups cream cheese
100 grams Manchego cheese, sliced

Mix the potato pulp with the cream, cream cheese, bacon, and scallion.
Stuff each potato and top each one with a slice of manchego cheese, and place them in a baking dish.
