Baked Potato

The best complement for your holiday dishes is this baked potato, made with asparagus, red chilies, with a touch of spinach and lemon. You will surprise all your guests!

  • 3 cups new potatoes, halved
  • 1/2 kilos asparagus
  • 1 tablespoon red chile, dried
  • 2 tablespoons thyme
  • 3 tablespoons olive oil
  • salt
  • black pepper
  • 1 tablespoon breadcrumbs, powder
  • 3 cups spinach
  • 5 limes, lemon juice
  • parsley, finely chopped, for garnish

  • Cook the potatoes for 20 minutes and the asparagus for 3 minutes in a pot of boiling water with salt.
  • Place the halved potatoes, asparagus, dried red chili, dried or fresh thyme, olive oil, a touch of salt, ground black pepper, and breadcrumbs in an oven-safe dish.
  • Bake in a preheated oven at 180° C for 10 minutes.
  • Once the potatoes and asparagus are well browned, remove from the oven and add lemon juice.
  • On a plate, place the baby spinach along with the golden potatoes and asparagus, and drizzle with the liquid mixture left in the baking dish of olive oil, lemon juice, and fresh parsley.
