  • 6 potatoes, whole with skin
  • 1/4 cups butter, for mashed potatoes
  • 1/2 cups cow's milk, for mashed potatoes
  • 1 pinch salt, for mashed potatoes

  • 2 tablespoons olive oil, for meat
  • 1/4 cups onion, finely chopped for the meat
  • 1 teaspoon garlic, finely chopped for the meat
  • 1/2 kilos ground meat, beef, for the meat
  • 1 cup tomato purée, for the meat
  • 1/4 cups red wine, for the meat
  • 1/4 cups beef broth, for the meat
  • 2 tablespoons thyme, for the meat
  • 2 bay, for the meat
  • 1 pinch salt, for the meat
  • 1 pinch pepper, for the meat
  • 2 carrots, cut into small cubes, for the meat
  • 1 cup peas, pre-cooked, for the meat
  • 1/2 cups Parmesan cheese, finely grated
  • parsley, finely chopped

  • Preheat the oven to 180°C.
  • In a pot, place the potatoes with water and salt, cook until soft, remove and cool. With a spoon, hollow out the center of the potato and set aside both parts.
  • For the mashed potatoes, in a medium pot, heat the butter with the milk, the filling from the potatoes you reserved earlier, and mash the potato with a masher until you form a puree, season to your taste with salt, pepper, and nutmeg. Cook until you obtain a consistent puree. Set aside.
  • For the meat, heat a small pot over medium heat with olive oil, cook the onion with the garlic, add the meat and cook until browned, add the tomato puree, red wine, beef broth, season with thyme, bay leaves, season with salt and pepper, cook until it reduces. Finally, add the carrot and peas, remove from heat and set aside.
  • Stuff the potatoes with the previous preparation, using a star tip cover with the mashed potatoes and sprinkle with parmesan cheese, bake for 5 to 7 minutes to gratin and serve with fresh parsley.
