6 potatoes, hollowed out in the center, reserve the pulp
3/4 cups sour cream
3/4 cups bacon, fried, finely chopped
5 tablespoons chives, finely chopped
3/4 cups cream cheese
6 slices Manchego cheese

Preheat the oven to 180ºC.
Mix the potato pulp with the cream, cream cheese, bacon, and green onion.
Stuff each potato and top each with a slice of manchego cheese, placing them in a baking dish.
Bake for 20 minutes and/or microwave on high for 2 minutes, serve.
