This snack will become your favorite as it is not only healthy but also very easy to prepare. Enjoy this combination of battered vegetables accompanied by a habanero dip.
1 1/2 cups Tres Estrellas® rice flour, for the batter
1 egg, for the batter
1 1/2 cups sparkling water, for the batter
1 tablespoon garlic powder, for the batter
1 tablespoon paprika, powdered, for the batter
salt, for the batter
pepper, for the batter
1 cup pumpkin, sliced
1 cup cauliflower, in small florets
1 cup broccoli, in small florets
2 Habanero chiles, roasted, for the habanero dressing
1 cup jocoque, for the habanero dressing
1/2 cups plain yogurt, sugar-free, for the habanero dressing

For the batter, in a bowl mix Tres Estrellas® Rice Flour with the egg, mineral water, garlic powder, paprika, and season with salt and pepper. Dip the vegetables in the batter until completely covered.
In a small pot over medium heat, heat the oil and fry the vegetables for 7 minutes. Place on absorbent paper to remove excess oil.
For the habanero dip, blend the chili with the jocoque, natural yogurt, and season with salt and pepper for 3 minutes. Set aside.
Arrange the vegetables on a wide plate with the habanero dip in the center and garnish with green onion.
