Black Bean and Bacon Quesadillas

  • 1/2 cups black beans, drained
  • 1/2 cups mango, chopped
  • 1/2 cups Monterey Jack cheese, shredded
  • 4 corn tortillas
  • 4 slices bacon, cooked and well browned
  • 1/4 cups sour cream
  • 1/4 cups fresh cilantro, chopped

  • Mix the first 3 ingredients well. Place equal amounts of this mixture in the center of the tortillas; top with the bacon slices. Fold the tortillas, completely covering the filling.
  • Heat a large non-stick skillet over medium-high heat. Place the tortillas two at a time; cook for 2 to 3 minutes on each side or until both sides are lightly browned. Repeat with the remaining tortillas.
  • Serve the tortillas, garnish with sour cream and cilantro.
