Ingredients

4 portions
  • 1/2 cups black bean, drained
  • 1/2 cups mango, chopped
  • 1/2 cups monterrey cheese, grated
  • 4 corn tortillas
  • 4 slices bacon, cooked and well browned
  • 1/4 cups cream
  • 1/4 cups fresh coriander, chopped

Preparation

Mix well the first 3 ingredients. Place equal amounts of this mixture in the center of the tortillas; Complete with slices of bacon. Fold the tortillas, covering the filling completely.
Heat a large nonstick skillet over medium-high heat. Place the tortillas in pairs; kitchen from 2 to 3 min. on the side or until both sides are lightly browned. Repeat with the rest of the tortillas.
Serve the tortillas, garnish with sour cream and cilantro.
