Ingredients: 1/2 cups black beans, drained; 1/2 cups mango, chopped; 1/2 cups Monterey Jack cheese, shredded; 4 corn tortillas; 4 slices bacon, cooked and well browned; 1/4 cups sour cream; 1/4 cups fresh cilantro, chopped

Mix the first 3 ingredients well. Place equal amounts of this mixture in the center of the tortillas; top with the bacon slices. Fold the tortillas, completely covering the filling. Heat a large non-stick skillet over medium-high heat. Place the tortillas two at a time; cook for 2 to 3 minutes on each side or until both sides are lightly browned. Repeat with the remaining tortillas.
