Black Bean Cakes

  • 2 tablespoons vegetable oil
  • 1 tablespoon cumin powder
  • 1/3 cups fresh cilantro
  • 1/2 cups Greek yogurt
  • 2 tablespoons cow's milk
  • 1/2 teaspoons salt
  • 1 pinch chile powder

  • Place the SOS® Black Bean Querétaro in a pressure cooker with water.
  • Let them boil, lower the heat, and cook for 25 minutes.
  • Mash the beans until you achieve a smooth consistency.
  • Add the cumin, salt, and cilantro; mix well.
  • Form small balls with your hands and place them on wax paper.
  • Press with the palm of your hand on the paper to form cakes.
  • Heat the oil in a large skillet.
  • Fry the cakes for 2 to 3 minutes on each side.
  • Mix the yogurt, milk, and chili powder.
  • Serve the sauce over the hot cakes.
