For artichoke lovers, prepare these delicious boiled artichokes accompanied by a vegan pesto sauce made with pine nuts, fresh basil leaves, lemon juice, and olive oil. It will be the perfect appetizer!
To clean the artichokes, use a knife to cut the top off each one without going halfway. Trim the tips of the leaves with scissors and remove the smaller leaves from the bottom. Peel the stems and cut the bottom.
Add the artichokes to a pot of boiling water and salt, add the yellow lemon juice, and cook for about 50 minutes or until a leaf easily comes off when pulled.
For the pesto, in a food processor, blend the pine nuts with the basil, garlic, lemon juice, water, and olive oil. Season with salt and pepper.
Serve the artichoke with the dressing and enjoy.
