To clean the artichokes, use a knife to cut the top off each one without going halfway. Trim the tips of the leaves with scissors and remove the smaller leaves from the bottom. Peel the stems and cut the bottom. Add the artichokes to a pot of boiling water and salt, add the yellow lemon juice, and cook for about 50 minutes or until a leaf easily comes off when pulled.
