Delicious low-carb cauliflower tabbouleh prepared with parsley, fresh tomato, red onion, garlic seasoned with olive oil, yellow lemon, and a spicy touch of chili flakes. This combination is super fresh and low in calories.

  • 1 1/2 cups Eva® cauliflower bits
  • 2 tomatoes, cut into small cubes
  • 1 cup parsley, finely chopped
  • 1/4 cups red onion, diced
  • 1/4 cups yellow bell pepper, diced
  • 1/4 cups olive oil
  • 1/2 cups lime juice, yellow
  • 2 teaspoons chile flakes
  • 1 pinch salt
  • 1 pinch pepper

  • Add the Eva® Cauliflower Bits to a bowl.
  • Add to the bowl the tomato, parsley, red onion, yellow bell pepper, mix well and season with olive oil, lemon juice, chili flakes, salt, and pepper.
