2 tomatoes, cut into small cubes
1 cup parsley, finely chopped
1/4 cups red onion, diced
1/4 cups yellow bell pepper, diced
1/4 cups olive oil
1/2 cups lime juice, yellow
2 teaspoons chile flakes
1 pinch salt
1 pinch pepper

Add the Eva® Cauliflower Bits to a bowl.
Add to the bowl the tomato, parsley, red onion, yellow bell pepper, mix well and season with olive oil, lemon juice, chili flakes, salt, and pepper.
Mix well to integrate flavors and serve.
